NACHMELENÁ OPICE celebrates 3 YEARS!!! For the 3rd anniversary of our monkey we made an unconventional special, a Belgian monastery dark ALE, to which sour cherry juice was added. The result is a beer in which the maltiness of the beer is complemented by light acidity and the aroma of sour cherries. Among other things, chocolate wheat malt was used in the sprinkling for a slight touch of chocolate in the taste.

NACHMELENA OPICE CELEBRATES 4 YEARS!!! The annual style special WHITE IPA 14% is a beer that combines 2 beer styles: WIT (Belgian wheat) and IPA (india pale ale). The wheat malt and beer flakes used lend a pleasant cloudiness and fullness. The resulting beer has a full body with medium bitterness, which is complemented by aromas of coriander, orange peel and fruit. Two types of yeast were used for fermentation, cold hopped with Amarillo.

For the 5th anniversary, we have pbrewed a special beer in the sign of number 5: IPA 15%, in which we used 5 of our most popular hops: Amarillo, Cascade, Citra, Mosaic, Simcoe. OPICE CELEBRATES 6 YEARS !!! This year we have brewed something stronger to celebrate: dark beer in the Baltic Porter style with the addition of coconut with a strength of 20% EPM. A combination of caramel and chocolate malts is used to produce this beer, the beer is bottom-fermented. The beer is dominated by the aroma of dark malts with a hint of chocolate, caramel, a little coffee. Roasted grated coconut was added to the maturation. So cheers !!!

MONKEY CELEBRATES 7 YEARS!!! This year we have brewed juicy DOUBLE NEIPU 18% with Citra, Mosaic, Simcoe and Sabro hops for the celebration. OPICE CELEBRATES 8 YEARS!!! This year, we have brewed the German beer style DOPPELBOCK for the celebration. It is a bottom-fermented amber beer with 7.5% alcohol, which is mainly based on the composition of malts. A large proportion of bavarian malt is used together with caramel malt, and the resulting beer is significantly thick in body, bready, with light caramel. Bitterness is lower and mild thanks to the use of aromatic German hop varieties. Cheers!!!

Cherry Belgian Ale 16% matured for 6 months in a barrel of Gold Cock whiskey. After bottling, the beer matured for another 1 month in bottles. Only 315 botlles were produced.

Baltic Porter 20% is a strong black bottom-fermented beer with 9.0% alcohol. We brewed it in November 2021 and moved it to Pedro Ximenes sherry and Jamaican rum wooden casks and let it age for 10 months. In September 2022, we bottled the beer, added a little yeast and sugar and left it to mature in the bottles for another 2 months. The result is 2 special editions of 600 bottles each. After the sherry, the beer acquired a slightly sour character evoking red grapes and wine. In combination with rum, on the other hand, the beer acquired a softer character of sweeter cane rum. In both editions, you can feel the character of dark wood and sour cherries, which comes from dark beer and long aging.

Mosaic (tropical fruit, blueberries, citrus), III. Eldorado (apricot, pineapple, melon), IV. Idaho7 (pineapple, citrus, apricot).

This cooperation was created thanks to the long-term cooperation of Nachmelená Opice with Budweiser Budvar. Brewer Michal Kuřec together with brewer Petr Košin from Budvar studied brewing in Prague and fulfilled their dream by brewing the beer. This batch is unique in that the mini-brewing processes with the production of ALEn style beer have been successfully applied in the operation of a large brewery. The final beer called OPIČÍ EJL is a top-fermented beer, brewed by an infusion brew, dry-hopped using aromatic American hops Cascade, Simcoe, Amarillo and Mosaic.

A cooperative brewing with DEJF brewery brewed at DEJFa in Studénka, when this time we brewed a beer cake. The beer is a PASTRY SOUR beer style, in which we used 20 kg of pears, 20 kg of raspberries, a pile of LOTUS biscuits and cinnamon. The beer is brewed with its 20% EPM has 6.5% alcohol. The resulting beer has a very fruity taste with notes of sour cherries, plums, caramel cookies and even a touch of chocolate.

For this IPA, we used only CRYO hops, which are created by freezing hops and contain 2 times more hop oils. The dosage of hops is the same as for our other ales, but the aroma should be much more pronounced. We chose the fruitier Cascade with Amarillo and the spicier Columbus as varieties.

The Session IPA beer style is a lighter, more drinkable version of the IPA style with 4.7% alcohol. The beer is dominated by a fruity hop aroma, the taste is rather dry and bitter in the finish. American varieties Simcoe and Mosaic, Mosaic in CRYO form (frozen, concentrated hops) were used for hopping. The perfect summer IPA. 🙂

Choco Stout 16% is a strong dark stout, in which cocoa beans has been also used to enhance the chocolate aroma. In cooperation with jesenickacokolada.cz, we carefully selected Criollo cocoa beans from Venezuela in the best quality and added them to lagering. The resulting beer is strong, pleasantly velvety and full, with light coffee and especially chocolate aroma.

India Pale Lager is a beer style that combines the production processes of lager and ale beer style. The beer is a bottom-fermented, in a brewhouse it is made by an infusion like ale beer, hop has been added in whirlpool and for dry hopping. We used a new Czech hop variety MOST in combination with classical American Cascade.

Saison is a Belgian beer style in which we use special yeast Belle Saison. These yeasts ferment beer more than usual, so it is drier and has more alcohol. It creates an aroma of fruit, spices and a pepper. For a more interesting taste profile, we used hops Nelson Sauvin in the whirlpool , and we added wooden chips from American oak to lagering for a week. The result beer is a dry with a fruity-spicy touch slightly reminiscent of champagne.

STRATA hop variaty is a new American hop variety. We got a few kilograms and we decided to show this hops in the NEIPA beer style: the summer version of Session NEIPA with a strength of 12% EPM and alcohol 4.7%. STRATA gives the beer a tropical and distinctive fruity aroma, which is accompanied by a juice character of the NEIPA style.

1st top-fermented beer in the history of Budweiser Budvar which we brewed 4 yaers ago!!! Now we are repeating this special beer for great success. This cooperation was created thanks to the long-term cooperation of Nachmelená Opice with Budweiser Budvar. Brewer Michal Kuřec together with brewer Petr Košin from Budvar studied brewing in Prague and fulfilled their dream by brewing the beer. This batch is unique in that the mini-brewing processes with the production of ALEn style beer have been successfully applied in the operation of a large brewery. The final beer called OPIČÍ EJL is a top-fermented beer, brewed by an infusion brew, dry-hopped using aromatic American hops Cascade, Simcoe, Amarillo and Mosaic.

The BLACK IPA beer style uses an unconventional combination of caramel and colored malts with fragrant aromatic hops. For this dark beer, we used carafe special malt, chocolate wheaten and roasted barley, then spicy Columbus hops together with citrus Citra and fruity Galaxy. The resulting beer is black but still significantly fresh with slightly higher bitterness.

A top-fermented RYE IPA beer-style Christmas special. To make beer, part of the malt is replaced with rye, which adds fullness, breadiness and a pleasant semi-dark color to the beer. The beer is hopped both on the boil and cold (so-called dry hopping) with aromatic varieties of Amarillo, Cascade and Columbus hops. The resulting beer is so fragrant and fresh from the hops and at the same time beautifully full from the use of rye. Merry Christmas!

HP201 is a new of Czech hop variety, still in the process of breeding by our friend Jindra Křivánek. It´s a semi-dwarf variety with a higher content of bitter acids and essential oils, which give the hops a rich fruity and citrus aroma. We used 50 kg of this fresh harvested hop, for brewing, whirlpool and dry hopping.

Velikonoční ALE 13% (EASTER ALE 13%) is a light top-fermented beer that is intensely hopped in the brewhouse and especially cold-hopped with American hop varieties APOLLO, COMET and MOSAIC. The resulting aroma promises hints of hop resins, grapefruit and tropical fruit with a moderately intense and drier bitterness in the taste and aftertaste.
